Beam might sound a bit odd up there.
Arc has up-firing speakers intended to bounce off the ceiling, so it would sound really odd.
Why can’t you use the wall mount to put an Arc below the screen?
I believe there are also ones that extend/retract if your screen isn’t flush to the wall.
How about a Sonos Amp and in-wall speakers, in ceiling are possible too but suffer the too-high issue too.
More on the setup might get you better suggestions.

The ceiling mounted screen goes up when not in use so I can’t put anything below it or it might have someone run into it as it leads to a hallway.
I was thinking of using a submini and era 100. but wondering what sound I'll miss by not having anything come ‘from the screen’. right now I’m just using the sound from the projector and its subpar. Anything would be an improvement.

Soundbar or Amp are your only good choices for sound from a TV source due to the delay/echo issue you’d get from other Sonos options.
Really sounds like the Sonos Amp and passive speakers is your best option. In wall, in ceiling or surface mount ones are all available in the Sonos store. Other brands might work for you too but won’t have access to all Sonos features.
