I have a Sonos Beam Gen 2 and I wanted to buy some Play:3 for surround sound and to do Dolby Atmos but I don't know if it's possible...

It will be hard to find a pair of PLAY:3s, they haven’t been manufactured by Sonos for years. But if you read the FAQ on the Sonos sales page for the Beam, a pair would certainly work.
