I’m watching a movie on Plex which shows it’s Dolby Digital Plus 5.1 and I’m sure it’s only stereo and the same thing watching YouTube videos. I'm sure those are also stereo. I’m wondering if I have a setting messed up in my App. Any ideas?

Problem solved! I went in and reset Sony Bravia TV and everything is working just like I’d expect. Thanks everyone!

Your streaming device may be converting to DD+ 5.1. What device are you using?

None of those convert that I know of. Fire Stick has developers tools that will display the specs of the incoming source, so you ca see if it is actually DD+. See this link:
