I have 2x era 300 as surround speakers with my arc and sub and I understand my system should now be able to generate 7.1 channels. I'm trying to get this out of my PS5 whilst playing games, however the Sonos app keeps displaying 5.1. So is this a bug? Am I really getting 7.1 instead of 5.1? What am I missing here?

Yes, you have a 7.1.4 setup. But if you want 7.1 audio, you need a 7.1 audio source. Does the game you are playing support 7.1 audio or does it just have a 5.1 audio track?
