I found a solution by getting a cheap universal remote and pairing it to the Sonos soundbar then adding the universal remote to the Apple TV.

Same here. Quite frankly I didn’t know there was an issue that required a solution. What version of AppleTV is

I was having issues with my Playbar and Apple Remote not being recognised in the Sonos pairing feature in the app.
The playbar was working with my old Apple tv and remote only because I had the same issue and worked out how to pair with another ir remote from my fetch tv when I set up years ago. I upgraded Apple TV and playbar wouldn’t see the ir againwhen adding remote and had forgotten I had this issue or how I got around it.
I tried everything from the long list of threads on these forums with similar problems with Apple TV remotes and other remotes.
Power cycle of tvs, Apple, soundbar. Rebooting remotes, networks etc. Tried other Apple remotes.
Even factory reset soundbar and reinstalled Sonos iOS app.
The solution I found works and shared it hoping someone else would benefit as I didn’t see this work around clearly listed anywhere else and it’s a simple but effective work around as the Sonos or receiver is clearly working and it was only related to multiple Apple TV remotes.
Glad you resolved your issue. However, a true work-around typically doesn’t require purchase of another product. I’ve owned AppleTV boxes dating back to the original which was the size of a Mac Mini (pre-2025) and never had to purchase a universal remote to make it work with my TV volume. Furthermore, you failed to mention your brand/model TV nor the remote you purchased.
I have a Kogan TV which is an AI Point model.
I would love for it to work without the workaround but that’s all I could get to resolve.
The remote is an unbranded cheap universal one from Kmart. I didn’t even bother to properly pair all the other buttons with the Apple TV when setting up.
