At night I switch to use Bluetooth headphones but the Q90T always switches audio back to HDMI/eARC

That’s the way CEC is designed to work. I think if you turn off CEC on the TV before using the headphones, the Arc should stay off.
Yes that’s correct on my TV it’s called AnyNet+ when you turn that off it no longer favors ARC.
