I have just ordered 300s to replace my surround Ones and line-in Five, but I’ve just found out that that line-in is disabled when 300s are used as surrounds.
There must be a workaround for this.

No, there isn’t.
Search the forums - lots of times this has been asked about/requested, and explanations given as to why it can’t be done. (Though your thread title implies you may already know the answers and reasons.)
Sorry, there is no workaround. Sonos knows about that feature request for a long time and as they know best how in detail the devices work in surround mode, they imo will know why it’s still not possible.
I just can tell you that it would cause a lot of data traffic and I suppose it wouldn’t work properly if a surround speaker has to do its main job and also jas to work as line in at the same time.
