Can I connect Sonos arc direct to Apple 4K TV, or does it need to connect via TV using HDMI/arc?

Not unless you use AirPlay 2, which is stereo only. The Arc uses HDMI-ARC to receive its full signal, something that is most often generated by the electronics built in to the TV.
