If the tv has got an optical audio output, just connect your Playbar via optical toslink cable. That’s all…

Set TVs audio settings to SPDIF output and audio format to Bittstream / Passthrough. 

Important to note that optical is a one way connection, no data from the Sonos travels backwards to the TV set.
 

Which means all the audio settings that may need to be adjusted are on the TV, or the device feeding the TV, as ​@Schlumpf alludes to.

And to complete… you will need a infrared remote to control Playbars volume without using the Sonos app. So please check if the Sky TV comes with an ir supported remote control. Otherwise you can use any other ir remote… but just for Playbars room volume.
