I have a Sonos Playbar approx 3 years old, is it possible to connect this to a peleton bike?

If the Peloton bike has a screen with an optical out, maybe.
I.e. no. Not without a huge amount of effort.
Assuming your Playbar is connected to a TV and depending on your TV, it may be possible to stream your Peleton screen to your TV.

Not sure if the audio would also stream to the TV and thus to the Playbar, but worth a try.
