For my home theater, should I go with the ultimate immersive set with Arc Ultra or with AVR? I don’t know if my rooms 7 ft drop ceiling with a 24-inch wide AC trunk running through it(covered with drop ceiling) will allow for the speakers to perform their best.

While soundbars are neat and convenient to install, I think that a formal AVR will perform better in your space.
If the ceiling absorbs most of the upward firing ATMOS sound, the overall impression will be lower. For some listeners this will not be very significant, for other listeners it’s a big issue. For example, modern wiz bang action flicks will seem tame, but older, classic films were produced before DOLBY existed.
A lot depends, not on your AVR, but on your speaker choices. If you go with speakers that like the Arc depend on upfiring drivers you will see little difference.
If you get speakers that fully (no bouncing, but in-ceiling or high mounted) support Atmos there will be a huge difference, but that will not only be in sound but in price, convince and installation.
Most everyone lives with the compromises and uses bouncing height.
Drop ceilings are typically sound deadening to some degree. How mush depends upon the material used. Bottom-line it may be a challenge to achieve a good Dolby-Atmos bubble with either Sonos or an AVR system.
