I have a new Arc Ultra and I would like to know if I can use my Beam (2nd gen) as a rear speaker to have Dolby Atmos.

No, you can only use two matching speakers as rear surrounds, as per:

https://support.sonos.com/en-gb/article/surround-sound-guidelines-and-limitations
