Would I be able to create a surround sound system with my Sonos beam soundbar, aftermarket rears, and a sub? I also have 2 or 3 Connect:Amps left over from a previous house.

No. Like many other manufacturers, Sonos require a home theater situation to be mostly Sonos devices. Or powered by Sonos, as you can yes the Sonos Amp to power third party speakers, for both front (stereo, with faux center channel) and rear third party speakers. You could conceivably use the front Amp’s subwoofer output to feed a self powered Subwoofer, but if you use a Sonos soundbar of any type, there is no way to get the subwoofer signal out of it other than using a Sonos subwoofer.
