I have a number of sonos one speakers around the house. I have in the living room two new sonos ones with a Ray sound bar, is there any way of being able to use another speaker say in the kitchen to listen to music whilst my phone app is being used for the tv set up.

Yes, there is. The phone app is just a remote to the speakers, so you can choose what speaker you want to command with it by tapping the circled button:

The app is just a remote control for the system. It does not play any audio itself. It is designed to control multiple "rooms".
