I am having issues with my 4K UHD Blu-Rays playing full Dolby Atmos on my current setup. I play use PS5 that is connected to my Samsung S90F. I have Beam (Gen 2) and SYMFONISK rears that support Dolby Atmos (when streaming or playing games, I have no problem with Atmos.) When I start playing an 4k blu ray with an Atmos track (in this case, Dune: Part 2), my sonos app is saying that it is only receiving "multichannel pcm 5.1" when it should be receiving Dolby Atmos. I saw people suggested selecting "pass-through" on my Samsung TV but this did not help. Any suggestions on what might be going on?

So I found the solution and I am posting it here for anyone else who might need it. The PS5 has a “secret” audio output menu that specifically applies when you’re playing from the disk drive. It is only accessible when you are playing a disk. You can choose either “Bitstream” or “PCM”
If the 4k Blu-ray is Dolby Atmos, you need to navigate to this menu and select “Bitstream”.
If it’s mastered in DTS (DTS-HD MA for any nolan film for example), you’ll actually want to switch this to PCM. If your TV is passing through the audio correctly, this means the lossless audio should be transmitted and you’ll get an Multichannel PCM 5.1 output on your app. (I think if the Blu-Ray has DTS:X and you do this same hting, you’ll get Multichannel PCM 7.1, but i haven’t checked myself).
