Will Sonos One speakers wirelessly connect to Wi-Fi enabled Yamaha TSR-7850 7.2-Channel Network AV Receiver?

Short answer...No.

Long answer...what exactly are you trying to do? The Connect product is designed to work with your receiver. It can feed your receiver audio from Sonos music sources, or be used to play whatever is on your receiver to your other Sonos speakers (slight delays are possible). However, there is no way to have the Sonos One be one of the speakers in your 7.2 setup, if that's what you mean.
