Only have 2 surrounds, but 2 soundbars ( Beam & Arc). Can I easily switch the 2 surrounds to whatever soundbar I want to use at the time?

No, you’d need to always remove and add the surrounds in each soundbar’s settings each time. You’d be well served getting two more surrounds for ease.
But hassle works out cheaper, if you’re happy to remove and add each time.
Also, if you’ve run Trueplay on your setup, you’d need to run it every time you change the surrounds over.
