I am building a patio that will house 2 TV’s (most likely Samsung), and the wall are open so I can still run all the cables I need to make the system work. How do I set up/connect 2 tv's to one sound bar (sonos arc), one sub, and additional speakers?

You’d need some sort of HDMI (ARC or eARC capable) switch to connect to both TVs, and then to the one Arc.
The additional speakers will introduce lip sync issues if you intend to use them to support TV audio.
I was assuming the ‘additional speakers’ were a pair of surrounds, but if not,
