I have two sources with 4k and Dolby Atmos output.
They are connected to a 4k projector without eARC.
What will I need to connect it to SONOS ARC and take advantage of Dolby Atmos?

No, they won’t work. You’d need a device that creates an eARC signal, neither of your devices do so. The only external device I’m aware of that can do so is the HD Fury Arcana. You could put that between your source devices and the projector, and have it create the eARC signal the Sonos Arc is looking for.
