I want to add a 2nd Sub to my Arc (Gen 3), 2 SL (Gen3) and Sub Gen (3) system. I know I need a minimum Gen 3 Sub to add a 2nd sub (which I have) but could I buy a 2nd hand Gen 1 Sub and add that in ?

Yes, you are able to add a Gen 1 Sub as your second sub in that setup.
