Why can't I switch between using bluetooth headphones and sonos beam without beam switching back on?

That would be a function of your TV set.
Beam is signalling via HDMI-CEC and grabbing back the audio.
Suggestion: get one of these and connect it to the TV's optical out (the latter configured for PCM, not DD). Not only will it not fight the Beam, but you'll also get lip-sync (and better quality) over aptX-LL when using compatible headphones/receiver.

Thanks that seems worth a try,Beam needs an upgrade to avoid this bit of unecessary kit and associated wiring
As stated that is a function of HDMI CEC, it would not be isolated to the beam.
