My question is this: If the Arc Ultra is 9.1.4 by itself what is the configuration/classification if I’ve added two Era 300’s and a Sub?

The short answer is that it is the same - 9.1.4. But, the surrounds aid the Arc Ultra in generating the different channels, giving more immersive results.
