I currently have an Arc set up using an ARC converter with Apple TV HD, 2 One SL’s and a sub set up over the Wi-fi. I’d like to set that as the default for all types of media from the Apple TV however this seems to be a gap, or I’m missing something. TV is a 1 year old 75in Samsung.

It depends on what version of the Apple TV and software it’s running, but on mine you go to Settings > Video and Audio > Audio Format and then choose what you want the Apple TV to generate. It is not a feature in the Sonos software.
