I want to extend my Sonos System (Playbar in one room and a PLAY:1 in another room) with AirPlay 2 functionality. If I extend my Playbar with two ONEs as surround speakers, will I have full access to AirPlay 2 functions?

Nobody knows, and Sonos is very tight lipped about these things until the official release.
Worst case, would be you would have to break a sonos one out of surround duties, send airplay2 to it so it plays, then group with wherever sonos unit you actually wanted to hear it play.
Best case it would not need to be broken out of surround duties, and could play on its own, or grouped with other units.
