I would like to know if the Ace Sidetone will work Bluetooth/USBC/3.5mm and connected to a Win 11 PC or a current Mac (I do work on PCs).

It looks like the answer is it may not work while plugged into another device:
- Sidetone: Active Noise Cancellation normally cancels out your own voice as well. Sidetone enables you to hear your own voice clearly while using Active Noise Cancellation on a call. May not work if your headphones are plugged into another device during your call.

Read the User Guide with the 3 references to Sidetone. I agree that is says that if you plugged into another device that Sidetone might not work when you are answering a call.
Here is a use case:
User wants to use Ace headphones with Sidetone to attend Teams or Zoom calls.
Connection: PC/Windows 11 all up to date.
Connection type: Bluetooth OR USBC/3.5mm.
Other Connections/Other Devices: None
Active Noise Cancellation: Can be on or off, does not matter.
