I have 3 Sonos speakers: Kitchen, Great Room (default), and Sunroom. When I start playing music through Google Home it defaults to Great Room. Can I use Google Assistant to turn off/on one of the other speakers?
I know that I can do this through the Sonos app but I’d like to be able to do it via voice.

Not at this moment in time (sadly) the Google integration with Sonos doesn’t support Sonos ‘grouping’ via voice command. It is indirectly supported using the Amazon Alexa Assistant on Sonos and their Alexa ‘Enabled’ Groups. So the hope by many is that Google/Sonos will do something similar, going forward, but neither company tend to share their development roadmap in advance (well, rarely), so it’s a case of fingers-x’d and waiting to see if this happens.
