I can only play through Sonos. Is it possible to play directly via the Apple Music app?

Yes, use AirPlay. Swipe down top right, and press AirPlay button, then select your Sonos Speaker.
When I swipe down…. there is no Sonos visible when pressing the Airplay button, only other devices
