I currently have a 5.1 system with sub/beam/ones but I noticed that when used as surrounds with a beam, the ones have their microphones turned off when Alexa is enabled. Would I lose any functionality by replacing the ones with play:1s? Are there any future plans for using the ones' microphones in 5.1 with the beam?

This is working as designed and is to ensure that the reply is always output from the Beam. (Alexa will always output from the triggered device and so if a One was triggered the Alexa reply may be hard to hear depending upon the Surround settings for your system - it won't be output across the full 5.1)
If you replace the Sonos One's with Play:1's there is no loss of functionality across your 5.1 set-up..
