I have just updated my home network and introduced access points which gives me great wifi coverage and speeds. Can I put my Sonos devices on a dedicated vlan and remove my boost without causing issues. i.e. my mobile device will be on a different vlan will the app still work

If you put your Sonos devices on a VLAN (why??), your phone will need to be on the same VLAN. Or you will spend your days coming up with firewall rules to make it work.

A lot of this depends upon the level of sophistication of you Access Points.  As an example, they must use the same SubNet and preferably not be set up for automatic channel switching.  I would recommend removing the Boost and connect one of your devices via an ethernet calbe if you experience any issues with connectivity.
