I have an all Wi-Fi setup for my TV and want to connect the same setup temporarily to my projector but It only has one HDMI port and doesn’t have AirPlay audio support, however it does have Bluetooth support.

So therefore my question is;

Will adding a Sonos Roam to the setup allow me to make my current setup work with my TV as normal whilst also adding the option of Bluetooth connectivity to my projector?

It can work. However, it won’t be surround sound, only stereo, and there is probably going to be a lip-sync problem due to delays in the Bluetooth.
