Both ALAC and AAC files use suffix .m4a How does Sonos differentiate between these two formats

Differentiate in what sense? For what purpose? I assume it is clear from the music file metadata.

From the metadata, in the file header. 

.m4a is a container and Sonos devices will play .alac (lossless) or aac (lossy) from devices at the bitrates shown in this Sonos support document:

Thanks - I now understand that Sonos differentiates .m4a files as to whether they are ALAC and AAC from the metadata in the file header that identifies the bitrate available.
