My scenario is this:

I have two ERA 300 speakers that I want to use just for listening to music.
My living room is approximately 40’ x 22’ 

I do not want to connect them as a stereo pair 

should I just make them a group, if so will Dolby Atmos still work as well.

Yes, the two Era 300s will still play Dolby Atmos when grouped with each other.

Only if you grouped a non-Atmos capable speaker/room would the music stream change to stereo overall.
