If I get a play 5 speaker to playback my turntable in one room, will I also be able to play back via my soundbar and play 1 speakers in another room.

Yes you will.
You could also play the radio or another music source (Apple, Deezer Your Music) on the Play 5 whilst playing the turntable on the Playbar

Just consider the Line-In as a separate device in the Sonos ecosystem. It happens to be inside the box of the Play:5, but isn't tied to it for sound.
