A friend gave me his old Zone Player S5. I am thinking to buy a used Play 5 Gen 1 from the market. Can I pair them as a stereo pair to use them with S1 ?

The ZonePlayer S5 was renamed as the Play:5 so they are basically the same speaker. So, yes, they can be paired as a stereo pair.
