Interesting. I’m curious if it downmixes Atmos content over Arc to some format the Sonos devices can read across a TosLink connection. It does mention DTS as an available output, but it doesn’t say what it does to Atmos input.
I’m also semi-concerned that at least one of those pictures suggests the output side has a label of Toalink, rather than TosLink.

I see your concern. However, the picture on the actual website shows the port labeled/spelled correctly. May have been a glitch in the snippet I took.
As mentioned in other posts, the below item worked brilliantly for connecting my Playbar’s optical to the TV’s HDMI-eARC port (in my case, a Samsung TV).
The Optical cable goes from the soundbar (could be Playbar or Ray) to the extractor, then HDMI from the extractor to the TV’s HDMI-eARC or HDMI-ARC port.
The TV’s audio output should be set to Receiver, although this might happen automatically.
It supports full 5.1 Dolby surround on Sonos soundbar + surround systems.

@AjTrek1 , I was looking at the image on Amazon’s website (well, technically, their app). At the bottom, it wasn’t one of your snipped images.
