I have 2 Sonos Ones and now I’m considering to by Beam to setting up multi channel audio system.
Is it able to play multi channel audio by using AirPlay2 (of AppleTV HD), like 5.1 system?

No. Airplay2 to Sonos is stereo only.

I’d throw in a slight caveat, although it’s unlikely to affect you at all. To my knowledge, Apple devices can send a multi channel signal to another Apple device. So you could send a Dolby Digital signal from an iPhone to an Apple TV. But not directly to Sonos, as
