I would like too know if I bought 2 pair of in wall Sonos speakers and 1 amp. Could I use a pair for each side left and right and still set up the surround sound off the arc and 2 subs?

No. The Arc already contains right, center and left channels. There is no way in the Sonos software to split off right and left, and end up with only center on the Arc.
Essentially, if you’re using an Arc, you can only add a single pair of surrounds, and up to a pair of Subs.
