I am upgrading my Beam Gen 1 to the Arc and got the Sonos One speakers ~1.5 years ago and was curious if Dolby Atmos sound will still play even though I have Sonos One speakers as my surround speakers??

Yes, an Arc + Ones as surrounds setup will play Dolby Atmos audio.

Sure. Sonos did Atmos before they released the Era 300s, no reason why that would have stopped.
