I recently purchased the AT LP120XBT turntable and can’t figure out how to connect it to my Sonos Beam and Sonos One Gen 2 speakers for the life of me. Any input would be appreciated!

Ummm, you need another device. The devices you mentioned have neither Bluetooth nor an analog input.
Most people use either a Sonos Port, or a Sonos Five, both of which have an analog input. Those accept a line level input, which requires a pre-amped output. I haven’t looked up that particular turntable, but it might have a built in pre-amp, so you’d need to set the output to ‘Line’. If it doesn’t, pre-Amos for turntables are pretty cheap at your retailer of choice, such as Amazon.
