I currently have the 5.1 surround setup with the arch, 2 One SL’s, and the gen 3 sub.

I want to get more depth out of it and have been thinking of adding two 5’s to replace the One SL’s I currently have. With the new Era 300’s I have more options.

what would be the best fit for the surround setup, adding 2 5’s or 2 Era 300’s?

The Era 300s add further height effects on the surrounds so would be favourable over the Fives.

Usually when used as surrounds you see little gain switching from Ones to Fives. In a really big room or when playing audio (not TV) in full mode they are a nice upgrade though.
