I’m going to upgrade my current Sonos One speakers (2) that I use as surrounds. Is it as simple as removing the current speakers and then adding the new ones as surrounds with my Arc and Sub?

Yes. Just make sure the new speakers are NOT paired as a stereo pair before you add them as surrounds.
