Sonos One Surround stops playing on one speaker

Remove/unbond the Ones from the Sonos sound bar in the Sonos app. Then unplug the sound bar and Ones from power for a couple of minutes and reboot your router and phone. Plug the speakers back in and make sure Wi-Fi is enabled for all speakers in the Sonos app. Then add/bond the Ones as surrounds again.
