Hi - I have the Sonos amp connected to two 3rd party ceiling speakers and my TV. Would the Sonos subwoofer be able to pair to the amp? Or would the speakers need to be Sonos too?

Yes, the Sonos Sub can be used with the Amp in that setup.
The Sonos Sub can be bonded to the Amp, yes. You also have the option of using a 3rd party sub with the Sonos amp.
