Need more than stereo from Apple TV 4K to LG OLED C8 to Sonos (playbase+sub+ls+rs)
Please let me know if you have Apple TV 4K playing Dolby 5.1 surround instead of stereo. My Apple TV 4K (v12.1 16J602) to HDMI3 to LG OLED C8 v04.10.15 to Sonos (playbase+sub+ls+rs) only receives stereo. However, the cable box to HDMI1 to LG OLED C8 optical to Sonos 5.1 works great.

Check the audio settings on the Apple TV. It should be (from memory) either Best Available or Dolby Digital 5.1.
You may also want to check the HDMI cable, to make sure it's current, if you have an older 1.2 compliant cable, it won't have the bandwidth necessary. In fact, in your case, I'd actually try swapping the cables between your cable box and your Apple TV, if the above issue isn't a problem. Worth a test, at the least.

Verified Apple TV 4K audio setting is Dolby Digital 5.1. Tried the following settings:
- Swapped cables HDMI 2.1, 2.0b, 2.0, and older
- LG connections HDMI1, 2, 3, and 4
- LG Sound / Optical / Digital Sound Out and
- LG Sound / HDMI ARC / Digital Sound Out and
- LG Picture / Additional Settings / HDMI ULTRA HD DEEP COLOR / and on HDMI1 - 4
No 5.1 surround yet. Hope to hear from someone with Apple TV 4K, LG C8, and Sonos.
