Unless you are a Sonos engineer, you have no idea if it is “simple” or not. The current 5.1 configuration could be on the edge for reliability, and adding more channels may push it over that edge. Your request is enough, Sonos knows there is some sort of market for this. Whether there are other factors at work, only Sonos knows.

Sonos sound bars already include drivers for the center, front left, and front right channels. Adding two more speakers in front would be redundant and defeat the purpose of using a sound bar.
And for a 7.1 setup, Sonos would need to allow adding side surround speakers.
