Can the HDMI to Optical-audio adapter for Beam be used to connect the Playbar to a HDMI port?
I'm pretty sure it's only for optical to HDMI use... it doesn't likely have the red LED inside to create an optical signal, instead just having the sensor to receive the signal so it can convert it to an HDMI audio stream.
Possible this would do the trick for you.

I also just tried to replace the optical out cable from my Playbar with the Sonos Opt-HDMI adaptor but it doesn’t seem to be working. What exactly is it for then?
It's an optical to HDMI-ARC adapter, not an HDMI-ARC to optical adapter.
