So, I want to setup a surround sound system using a LG soundbar and LG Subwoofer. The soundbar plugs into the TV using an optical cable, and the sounbar connects wirelessly to the LG subwoofer. On the soundbar there is an HDMI out which I was thinking about connecting into the Sonos Amp that I am going to buy to 2 ceiling speakers (I am using the Connect:Amp atm for some ceiling speakers) into the HDMI out on the soundbar so that I can connect my ceilling speakers to the soundbar and subwoofer, but if I do this will sourround sound still work? 

Sorry but this is a complete non-starter.  The Sonos home theater setups are designed to be purely Sonos - it involves some pretty clever software for making the whole thing work and sync.  You just cannot mix a LG soundbar and Subwoofer with Sonos surrounds.
