I have a projector BenQ tk800 (Without optical output, only AUX out).

This projector connects to Nvidia Shield with HDMI to HDMI and this is how I watch movies.

I want to connect the projector to Sonos beam that I will hear the movies through the Beam.

What will be the best way?

Your best bet would be an HDMI switch that pulls the audio off the HDMI stream and presents it as optical. Then connect that optical to the adapter that came with the Beam, and make sure whatever device is the source is sending only Dolby Digital to that HDMI switch.

I tried that, but the beam can’t find the voice from the optical:

Maybe someone’s know what to do?
