Since the Sonos Ace doesn’t come with an included power brick, can I use the apple 20W charger to charge the headphone’s battery? I see that the recommended wattage is 15W, but I don’t have any brick with those specifications. Are the headphones able to manage power by themselves using the provided USB-C cable?

You shouldn’t have an issue using the Apple 20W charger. The Ace will only draw the applicable wattage, so as long as the led is green then it is charging. I mostly use an Anker 65W brick to charge Ace. I’ve also used the supplied USB-C cable with 20W and 30W USB-C PD power banks and not had any issues with them.
