Trying to by a Ray with the black friday sale, based in Ireland (so EU) have some money on my paypal account i’d like to use but Paypal is not coming up as option, is it not accepted anymore?

Yes, strange one… PayPal is available for the Ray as payment in the US and UK, but not Ireland. See attached comparison between Ireland and UK, as an example…
Maybe contact Sonos Sales via this link and see if there is a reason for it, or just a site glitch…
